Haystacks
2 c. chocolate chips
2 c. butterscotch chips
1 c. peanuts
3-4 c. chow mein noodles
Over a double boiler, melt the chips, stirring constantly. Add peanuts. Mix in the chow mein noodles, making sure that all is coated with the melted chips. Drop by tablespoonsful onto wax papered cookie sheets. Cool in refrigerator til set.

Pumpkin Roll
Roll:
3 eggs
1 c. sugar
2/3 c. pumpkin
1 t. lemon juice
3/4 c. flour
1 t. baking powder
2 t. pumpkin pie spice
filling:
1 8oz cream cheese - room temperature
1 c. powdered sugar
1 T. butter
1 t. vanilla
Mix roll ingredients. Spray cookie sheet or jelly roll pan with cooking spray. Pour roll batter into pan, spreading evenly. Bake @ 350 degrees for 15 minutes. Remove from oven and flip onto parchment paper or cheesecloth. You can even use a clean, thin dishtowel. Roll up and cool completely.
I always double the filling mixture. Mix and spread evenly onto roll. Re- roll & sprinkle with powdered sugar. Freezes beautifully!
